Hungry? The Minuteman Diner Plans to Open in Mid-January

Diner by day, and tavern by night.

According to their website, the Minuteman Diner will serve a hot breakfast in remembrance of the cold one served to the Bedford Minutemen before they set out for Concord on April 19, 1775.

“Diner by day and Tavern by night” is the Minuteman Diner’s catch phrase. The community is invited to come on by and have some good food and watch a game on the 85-inch television. The proprietors, Diane and Ed Cohen, look forward to welcoming residents of Bedford and surrounding towns.

Bedford’s Minuteman Diner ~ Opening in Mid-January

Diane and Ed Cohen have their fingers crossed that their long-awaited Minuteman Diner’s grand opening is finally in sight. They plan for the restaurant to be a place to come with family, friends, co-workers, tourists, or just by yourself to enjoy a friendly atmosphere.

The Cohen family, their four children (and new granddaughter!) have lived in Bedford for over 23 years. Diane and Ed’s passion for foodservice, their entrepreneurial spirit, and an open embrace of new challenges inspired the Minuteman Diner.

Diane promises a dining experience that is friendly, inviting, clean, comfortable, with good service and quality local food. “The opening was a bit delayed and we thank you for your patience and support through the process. See you soon,” she says.

“My true calling is to develop a concept that prides itself on service that is a friendly, family-owned diner. What environment is more intimate than families and friends eating together?”

“If everything goes well with the final building and fire inspections on January 7, the Board of Health will come back in on Monday and once more after the food’s been delivered. Then the staff will train for a few days in hopes of a soft opening, with a grand opening on Tuesday, January 14.”

It’s been a long trail, from concept to opening. Complex code requirements, unanticipated difficulties, including a car crunching into the corner of the building in early November have caused the delay.

Opening Day Details

During the soft opening on Friday and Saturday, January 10 and 11, Minuteman Diner will serve breakfast from 6 am until 8 pm. Then on Sunday, January 12, the Diner will be open from 6 am until 2 pm.

The Grand Opening is set for Tuesday, January 14, with a full day of service from 6 am until 11 pm, breakfast, lunch, and dinner, including full bar service.

Oh, Yes, the Menu!

Breakfast will be especially important at the Minuteman Diner. It pays tribute to the brave men of the Bedford militia, who gathered on April 19, 1775, at Jeremiah Fitch’s tavern over a breakfast of cold cornmeal mush.

That fateful morning, before marching to Concord, Captain Jonathan Wilson spoke the famous words, “It is a cold breakfast, boys, but we’ll give the British a hot dinner; we’ll have every dog of them before night.”

The Bedford Minutemen kept their promise, and the Minuteman Diner plans to keep theirs: To serve a hot breakfast ALL DAY in memory of that cold one.

The menu highlights favorite dishes, “We are committed to serving quality food with creative options, but with all the classics. Indulge with our French toast, gluten-friendly meatloaf, frozen yogurt and toppings bar, or a specialty house cocktail,” says Ed.

“Try The Musket, a 16-inch sub loaded with Boar’s Head cold cuts and special dressing, or the Plymouth Rock Turkey Dinner on a braided roll.”

How to Find the Minuteman Diner

Located at 363 Great Road, Bedford, MA 01730, Minuteman Diner will be open Tuesday through Saturday from 6 am until 11 pm. Sunday hours will be 6 am until 2 pm, and the restaurant will be closed every Monday.
